This large 2018 Phaidon hardback records a wide range of Nordic baking traditions in 576 pages. The publisher describes 450 recipes collected across Denmark, the Faroe Islands, Finland, Greenland, Iceland, Norway and Sweden, accompanied by the author’s photographs of food, people and landscape.
The book earns its place here because baking turns culture into repeated action. Compared with the design survey, its objects are temporary: bread is shaped, shared and made again. Compared with the folklore collection, transmission happens through technique and ingredients as much as through words.
